Well, (a) you can be a Hiro* and enter a date/time there to stop current time and set it to some predetermined point in the present or past, and (b) you can always right-click the "LED" displays at the top and stop displaying local date and time if you wish.

Your plan doc will remember the setting. The default is that way to avoid 1,312 new users asking "how do I edit my object fields?", as opposed to 3 asking "how do I hide the edit fields?"
